Justin Bonello's Puff Pastry Egg Bomb

Justin Bonello's Puff Pastry Egg Bomb breakfast is not a typical Southern African dish and therefore probably not a dish travellers in South Africa might have come a long, but it is such a great and easy recipe that it will hopefully find its way into many self-catering kitchens in hostels and lodges, and, of course, into kitchens back home. Enjoy!

What you need:
  • a muffin tray
  • puff pasty (cut into squares)
  • eggs
  • oven (pre-heated to 180C)
  • salt
  • pepper
toppings (all optional ;-)):
  • garlic
  • onions
  • mushrooms
  • rocket
  • tomatoes
  • spring onions
  • smoked salmon
  • bacon
  • cheese (eg pecorino, mozzarella)
