South Africa: Oxtail potjie recipe!

Potjiekos is a traditional South African way of cooking in a in a round, cast iron, three-legged pot (the potjie), over small amounts of wood or charcoal. Cooked always outside, potjiekos is almost as popular amongst South Africans as the legendary braai. One of my personal favourites is oxtail potjie - a hearty, rich and slow cooked stew of meltingly soft oxtail on the bone, vegetables, mushrooms and red wine.

Oxtail Potjie Recipe

Ingredients:
  • 1kg oxtail, sliced into pieces in between the bones
  • 2 tbs all purpose flour
  • 1 tsp salt
  • 1 tsp sweet paprika
  • 1 tsp ground coriander
  • 1 tsp ground black pepper
  • vegetable oil
  • 250g Bacon, cubed
  • 10 tablespoons tomato paste
  • 4 carrots, chopped coarsely
  • 2 cloves garlic, minced
  • 2 onions, finely chopped
  • 2 large leeks, chopped coarsely
  • 1 tin peeled tomatoes (800 ml)
  • ca. 500g mushrooms
  • 10+ small potatoes
  • 300ml red wine
  • 1+- litre water (or beef stock)
  • 2 tablespoons dried thyme
  • 10 pepper corns
  • 3 bay leaves
  • salt
  • ground black pepper pepper

Instructions:
  • Wipe the oxtails dry with a paper towel.
  • Put flour, salt, paprika, coriander and pepper into a plastic bag and toss together with oxtail pieces so the meat is evenly coated. Retain seasoned flour left in the bag in case you need to thicken the stew later.
  • Prepare a direct fire and make sure you have hot coals for the start of the potjie.
  • Heat the vegetable oil in the potjie and sauté bacon cubes.
  • Remove bacon, add the oxtail to the pot and brown in the bacon fat. When each piece is browned all over, remove and drain on paper towels while keeping warm.
  • Add onion and garlic and fry for a few minutes until just turning brown.
  • Return the oxtail and bacon to the pot and add the tomato paste, peeled tomatoes, water (or beef stock), red wine, thyme, bay leaf and the peppercorns
  • Bring slowly to the boil. Cover tightly with a lid and allow to cook undisturbed for 5 hours.
  • Add leeks, carrots, mushrooms, potatoes and continue cooking slowly, without stirring, for another hour.
  • Add salt and pepper to taste.
  • Serve with fresh bread.

Koeksisters are probably the most South African of all uniquely South African sweet treats. The syrup-coated deep-fried dough is sticky, sweet and, of course, simply delicious! South African chef Zola Nene recently presented her version of a recipe for homemade sticky koeksisters on SABC3's morning show "The Expresso Show". Enjoy!

Recipes from Southern Africa: Chakalaka

Chakalaka is one of the most uniquely South African dishes. The usually spicy vegetable relish is popular all over South Africa and comes in many variations (see Jodi-Ann Pearton's version or KitchenCOZA's version) depending on region and, of course, family traditions. Most Chakalaka versions include onions, garlic, chillies, curry (power or paste), tomatoes and beans. It is traditionally served with meat, pap, bread or stews. KitchenCOZA - a webshow about the culinary world of South Africa!

update (06 Oct 2015): Pick n Pay has uploaded the first episode of the second season of KitchenCoZA. Farm-styled Pumpkin Fritters! Yum!

One of the largest supermarket chains in South Africa, Pick n Pay, has started a web cooking show about traditional South African dishes on YouTube in May 2015. The show, hosted by Lentswe Benghu (Africa on a Plate!) and his colleagues Sue Ann and Alet (Tiaan in season two), features typical recipes such as Oxtail Potjie, Chakalaka, Koeksisters, Chicken Biryani and many more. Watching the episodes you get step-by-step instructions on how to cook the particular dishes as well as a link to the full recipe and a list of all ingredients. Some of the ingredients might not be available at stores outside South Africa, but I am sure that - with some imagination and improvisation - you can easily replace most of the spice mixes, ready mades and Pick n Pay-labelled products. If not, feel free to ask and we try to find it out for you!

Recipes from Southern Africa: Cape Malay Fish Curry

Cape Town's Cape Malay cuisine is uniquely South African. The destinctive flavour of the dishes is a careful blend of aromatic spices, such as cardamom, coriander, cumin, cinnamon, turmeric, ginger, garlic, tamarind and chillies. The strong flavours of the Cape Malay cuisine are a mix of mainly Asian elements, but there are also plenty of African and European nuances too. Enjoy a Cape Malay Fish Curry! Ingredients:
  • 600 g rockling, hake or other firm white fish fillets, skin removed
  • salt, to season, plus 1 tsp, approximately, extra
  • pepper, to season
  • 60 ml cooking oil
  • 1 tsp of fennel seeds
  • 1 tsp of cumin seeds
  • 1 onion, finely chopped
  • 1 tsp crushed garlic
  • 1 fresh red birdseye chilli, halved lengthways
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground fennel
  • ½ tsp garam masala
  • ½ tsp ground turmeric
  • 1 tbsp hot masala, or to taste
  • 1 tsp medium masala
  • 3 tomatoes, peeled, grated
  • 1 tsp tamarind pulp, mixed with 60 ml boiling water and strained
  • 1 tbsp brown sugar, or to taste
  • 10 fresh curry leaves, bruised
  • ½ cup chopped coriander leaves
  • yellow rice, to serve

Recipes from Southern Africa: Spicy pineapples (Durban)

Durban's Golden Mile is famous for the Indian Ocean, the beaches, the surf spots, uShaka Marine World, the promenade with its top-class accommodation, fleamarkets, restaurants as well as for one of Durban's most unique snacks: spicy pineapples. Usually sold by street vendors all over the beachfront, spicy pineapples are tangy fresh pineapple chunks doused in curry powder. Delicious!

Ingredients:
  • one fresh pineapple
  • curry powder
  • salt
Method:
  • Mix two parts of curry powder with one part of salt
  • Cut the pineapple into bite-size chunks 
  • Douse the pineapple chunks with the curry mix 
  • Enjoy the sweet and hot pineapple chunks!

Recipes from Southern Africa: Durban Chicken Curry

It's been a while since we last featured a recipe on our blog. Reason enough to dig into the world of local food from South Africa again and present you a recipe for a traditional Durban Chicken Curry. Kudos Claire Winstanley and the Expresso breakfast show!



Ingredients:
  • 900g Free Range Chicken Drumsticks and Thighs
  • 3 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cinnamon sticks
  • ½ teaspoon dried chilli
  • 4 curry leaves
  • 1 teaspoon fennel seeds
  • 2 tablespoons Medium Curry Powder
  • 1 teaspoon salt
  • 2 cloves garlic, finely chopped
  • 1 teaspoon fresh ginger, finely chopped
  • 3 cups Organic chicken stock
  • 6 tomatoes, diced
  • 4 tablespoons tomato paste
  • 1 teaspoon sugar
  • 12 baby potatoes, peeled and halved
  • Fresh coriander leaves, for serving

Free: A Guide to Vegetarian, Vegan and Jain Dining in South Africa (100 pages)

South African Tourism, in association with the South African Chefs Association (SACA), published A Guide to Vegetarian, Vegan and Jain Dining in South Africa back in 2012 to encourage the tourism industry in South Africa to cater better for non meat-eating tourists. I just stumbled on the book on issuu and I must tell you that it is not only an interesting and inspiring read for the tourism industry, but also for everyone interested in cooking and dining. Foodies, listen up! Enjoy 100 pages full of non-meat recipes including vegetarian versions of South Africa classics like Bobotie, Malva Pudding and Bunny Chow!

Southern African recipes: A traditional Bobotie (Cape Town)

If there is a typical Capetonian dish, it is the Bobotie. A Bobotie consists of spiced minced meat, chutney, raisins and is baked with an egg-based topping. The dish was introduced to Cape Town and South Africa by colonists from the Dutch East India Company, who learned to love it while staying in Batavia (Jakarta). It was later, at least since the late 17th century, adopted by the Cape Malay community of Cape Town and is until today one of South Africa's most favourite local dishes. Enjoy! Ingredients:
  • 3 slices white bread
  • 600ml milk
  • 2 chopped onions
  • 1 grated apple
  • 60g butter
  • 30g curry powder
  • 900g cooked mince (lamb or beef)
  • 30g chutney
  • 30g chopped almonds
  • 65g raisins
  • 30ml vinegar
  • salt & pepper
  • 4 eggs
  • 3 bay leaves

Recipes from Southern Africa: Chakalaka

Chakalaka is one of the most South African dishes. The spicy vegetable relish, which may have originated in the townships of Johannesburg, is traditionally served with meat, pap, bread or stews. There is no fixed recipe for a Chakalaka; Chef Jodi-Ann Pearton's version in the video below is one of the countless variations of the dish. Enjoy! Ingredients:
  • 3 chopped onions
  • 3 grated carrots
  • 2 chopped green peppers
  • 3 chopped tomatoes
  • 50ml tomato paste
  • 100ml oil
  • 45ml curry powder*
  • 5ml tumeric
  • 15g salt & pepper
  • 1 chopped green chili
  • 5g chili powder
  • 125ml water
*it seems that 45ml curry are equivalent to 3 tablespoons

Street Food from Uganda: Rolex (recipe)

Everyone who has been to Kampala, Uganda and/or East Africa has probably had a "Rolex". Not the watch, of course, but one of Uganda's most favourite street foods. In the video below, Ronnie and David show us how to make one of your own at home. Just make sure that you use a cutting board - not everyone has David's knife skills.

Southern African recipes: Bobotie Burger

A while back we posted Heston Blumenthal's boerewors burger recipe on this blog. Now I found another great South African take on a traditional burger - the Bobotie Burger. The food editor of the South African newspaper "Sunday Times", Hillary Biller, presented the recipe on Expresso, a morning show aired on SABC3.



Ingredients:
  • 1 thick sliced white bread, crusts removed
  • 250ml (1 cup) milk
  • 30ml (2Tbs) oil
  • 1 large onion, finely chopped
  • 30ml (2Tbs) curry powder
  • 1kg beef mince
  • Salt and black pepper
  • 10 dried apricots, soaked in boiling water for 30 minutes
  • 1 extra large egg
  • Zest and juice of 1 lemon
Method:
  • Soak the bread in milk. Heat the oil and fry the onion till soft. Add the curry powder and fry till fragrant. Remove from heat.
  • In a large mixing bowl combine the mince with the onion and curry mixture. Season generously. Using your hands squeeze out the milk from the bread, reserving the milk, and add the softened bread to the mince and mix through.
  • Remove apricots from water and chop finely. Add to mince. Combine the egg and served milk and add to mince with lemon zest and juice.
  • Using wet hands, shape the mince into 12 burger patties. Place on a tray and refrigerate for about 30 minutes. In a non-stick pan fry the patties in a little oil for 8-10 minutes and turn and cook on the other side. Serve in rolls topped with fried onions, tomato slices and Mrs Ball’s chutney. Southern African recipes: Tomato bredie (South Africa)

It has been a while since we posted the last recipe from Southern Africa on the blog, but now I found one that I needed to post about and that you need to check out. In the video recipe, Gabi Le Roux, a South African music producer and avid home cook, explains how to make one of my favourite South African comfort dishes - the tomato breedie. A tomato breedie is a meat dish that can be made with lamb or mutton, or, like in the video, with chicken.



Remember to cook the bredie, which is an old Cape name for a dish of meat and vegetables stewed together, slowly for at least 2.5 hrs. The flavour will also improve if made a day in advance. Serve it with rice. Kudos @ Gabi Le Roux for the video and recipe!

Ingredients:
  • 1kg assorted pieces of chicken (skin on)
  • 3 large potatoes
  • 6 tomatoes
  • 4 cloves of garlic
  • 2 (large) onions
  • 1/2 tsp paprika
  • 1/2 tsp chilli flakes (to your taste)
  • freshly ground pepper
  • salt
  • mixed (italian) herbs
  • 1 tsp sugar
  • 1 chicken stock gel pot
  • 1 tbs butter
  • tomato paste
  • 2 tbs cooking oil
  • 1.5 cups of water

Video: Heston Blumenthal's boerewors burger recipe

The following recipe will sound like blasphemy to some readers, but to me it sounds simply delicious. A boerewors burger is the perfect combination of two of my favourite braai dishes, cheeseburger and boerewors. Ok, steaks and chops are also my favourites, and a boerie roll is also somewhere on top of my list, but a boerie burger... well it simply sounds really delicious to me! Kudos to Heston Blumenthal for the idea!



Ingredients (for 6 burger patties):
  • 20g breadcrumbs
  • 10g coriander seeds
  • 500g minced beef
  • 500g minced pork
  • 1/4 tsp ground gloves
  • 1/2 tsp ground nutmeg
  • 10g salt
  • 11/2 tsp ground black pepper
Everyone likes his/her burgers differently. I'd have my boerie burger with cheese, lettuce, tomatoes, onions, chilies and tomato sauce.

Backpacker recipes: Spaghetti aglio, olio e peperoncini

Spaghetti aglio, olio e peperoncini is probably one of the quickest and cheapest pasta dishes ever! It takes you around 15min to prepare it and it is simply delicious!

Ingredients
  • 500gr dry pasta (e.g. spaghetti)
  • around 1/2 cup (extra-virgin) olive oil
  • around 5+ gloves of garlic, finely chopped
  • around 1+ tbs parsley, finely chopped
  • chili flakes/ finely chopped fresh chilies (take as little/as much as you want)
  • salt
  • freshly grated parmesan (optional)
  • black olives (optional)
    Directions
    1. Put your pasta into a pot of boiling (salted) water and cook them al dente. 
    2. While the pasta is cooking, put the olive oil and the garlic in a pan over a medium heat.
    3. When the garlic begins to slightly change color add the parsley and chili
    4. Stir well and remove from heat.
    5. Add some of the (salted) water the pasta is cooking in to the garlic, chili & parsley in the pan (2-3 tbs)
    6. When the pasta is cooked, return the pan to a low heat.
    7. Drain the pasta and add it to the pan.
    8. Toss until the pasta is well coated with sauce.
    9. Serve at once with freshly grated parmesan.

    A very good reason to visit South Africa's West Coast

    The West Coast of South Africa is still not on the list of most (foreign) travellers. We are not too sure why, but one very good reason why travellers should go there is the "Gaaitjie Restaurant" in Paternoster, located about 2hrs north of Cape Town. The restaurant, owned by local foodie Suzie Holtzhausen, offers the finest of the West Coast's typical cuisine. To get an idea of what to the West Coast cooking is like, watch the video below and follow Suzie how she prepares some harder fillets with fennel sambal and tomato smoor.     If you want to cook it on your own, you need the following ingredients:
    • 6 fresh Harder (Southern Mullet) fillets
    • 1/2 cup of yellow corn meal
    • 1/2 of breadcrumbs
    • sea salt
    • white pepper
    • eggs
    • olive oil
    • fennel sambal (finely chopped fennel with olive oil) with (optional) sedam flowers or some lemon juice instead
    • tomato smoor (kinda chunky sauce or relish) with chili biltong

      Southern African recipes: Sosaties

      Sosaties are one of the great braai foods of Southern Africa. The skewers are sweet and sour as well as a little curry-ish. Enjoy!
      • 1.5kg lamb, cut into cubes
      • 200gr dried apricots
      • 3 tbs oil
      • 2 onions, chopped
      • 2 cloves of garlic, crushed
      • fresh chillies, chopped (optional)
      • 1 tbs curry powder
      • 200 ml vinegar
      • 200 ml water or red or white wine
      • 2 tbs apricot jam or tamarind paste
      • 2 tbs brown sugar
      • 2 bay leaves
      • salt and pepper to taste
      • wooden skewers
      1. Heat the oil in a large saute pan. Add the onions and saute until translucent. Add the garlic and curry powder and saute for another minute or so. Add the fresh chillies (optional).
      2. Add the vinegar, water or wine, jam or tamarind paste, brown sugar and bay leaves and bring to a boil. Reduce heat to medium-low and simmer until lightly thickened. Season to taste with salt and pepper.
      3. Place the lamb and apricots in a large bowl. Pour the cooked marinade over the lamb and apricots and toss thoroughly to coat. Cover and refrigerate for at least one day (three days would be perfect).
      4. Remove the lamb cubes and apricots from the marinade and thread on skewers that have been soaked in water. Alternate between chunks of meat and the apricots.
      5. Grill the sosaties on a hot grill, turning to cook on all sides.
      6. While the skewers are grilling, bring the marinade to a boil in a saucepan and simmer for 3 or 4 minutes. Serve hot in a bowl as a sauce for the sosaties.

      Justin Bonello's Puff Pastry Egg Bomb

      Justin Bonello's Puff Pastry Egg Bomb breakfast is not a typical Southern African dish and therefore probably not a dish travellers in South Africa might have come a long, but it is such a great and easy recipe that it will hopefully find its way into many self-catering kitchens in hostels and lodges, and, of course, into kitchens back home. Enjoy!

      Southern African recipes: Justin Bonello's Buttermilk Rusks

      If there is something uniquely South African it is buttermilk rusks - or karring melk beskuit in Afrikaans. South African rusks are of a texture somewhere between bread and cake, baked hard so that they must be dunked in coffee or tea or even hot chocolate. Yummy! And, of course, kudos Justin Bonello for sharing the recipe and video!

      Justin Bonello's Amarula Crème Brûlée

      Justin Bonello, a South African filmmaker, chef and television personality best known for starring in his own cooking and travel show "Cooked", seems to love Amrula like almost all travellers coming to South Africa do. Would he otherwise got the idea of combining Amarula with the classic Crème Brûlée in one dessert? Looks yummy, doesn't it?



      btw - Amarula, the tasty blend of cream and extract of marula (Sclerocarya birrea, known locally as the elephant or marriage tree), has recently been ranked sixth in a Top 10 Hot Liqueur poll conducted by respected global publication Drinks International. Not bad, hey?
