- 1 teaspoon fresh ginger, finely chopped
- 3 cups Organic chicken stock
- 6 tomatoes, diced
- 4 tablespoons tomato paste
- 1 teaspoon sugar
- 12 baby potatoes, peeled and halved
- Fresh coriander leaves, for serving
