Backpacker recipes: Spaghetti aglio, olio e peperoncini

Spaghetti aglio, olio e peperoncini is probably one of the quickest and cheapest pasta dishes ever! It takes you around 15min to prepare it and it is simply delicious!

Ingredients
  • 500gr dry pasta (e.g. spaghetti)
  • around 1/2 cup (extra-virgin) olive oil
  • around 5+ gloves of garlic, finely chopped
  • around 1+ tbs parsley, finely chopped
  • chili flakes/ finely chopped fresh chilies (take as little/as much as you want)
  • salt
  • freshly grated parmesan (optional)
  • black olives (optional)
    Directions
    1. Put your pasta into a pot of boiling (salted) water and cook them al dente. 
    2. While the pasta is cooking, put the olive oil and the garlic in a pan over a medium heat.
    3. When the garlic begins to slightly change color add the parsley and chili
    4. Stir well and remove from heat.
    5. Add some of the (salted) water the pasta is cooking in to the garlic, chili & parsley in the pan (2-3 tbs)
    6. When the pasta is cooked, return the pan to a low heat.
    7. Drain the pasta and add it to the pan.
    8. Toss until the pasta is well coated with sauce.
    9. Serve at once with freshly grated parmesan.

    South Africa: Travelers urged to take precautions against H1N1

    Pretoria - The Department of Health has urged travelers to the northern hemisphere to remain on high alert and exercise caution as part of minimising the risk of contracting the H1N1 virus.
    The department said the number of H1N1 Influenza cases in South Africa had decreased considerably for the last three weeks with the exception of one case reported on Sunday.
    A 28 year old female, who is 33 weeks pregnant, was admitted to a private hospital in Cape Town, after contracting H1N1.
    The woman, who is currently in the Intensive Care Unit, had traveled from Dubai. The department has cautioned that the risk of contracting the infection had shifted to travelers specifically those traveling to the northern hemisphere.
    "Disease activity in the northern hemisphere continues to spread and increase in intensity, in Europe, North America and Canadian countries were reporting nationwide increased rates of influenza-like illnesses with high rates of the pandemic H1N1 2009 virus detections," said Health spokesperson Fidel Hadebe, on Tuesday.
    Hadebe advised travelers to take precautions as part of preventing illnesses, noting that no H1N1 vaccine was available in South Africa, including Africa as a whole.
    "The department is engaged in negotiations with a view to securing doses of H1N1 vaccine. At this stage, there is no vaccine that is registered in Africa," said Hadebe.
    As of Monday, the country had confirmed 12 619 cases of H1N1 and 91 deaths.

    Plastic bags banned in Rwanda

    Travellers visiting Rwanda should know that the use of plastic bags (any plastic bag, even the duty free ones...) is now prohibited in Rwanda. The authorities banned them in order to combat pollution and littering in the country.
